And let me tell you, it was always worth the trip.

The key to this recipe is the special sauce that's slathered on the inside of the tortilla before it's grilled to perfection. The sauce is a closely guarded secret, but I'll do my best to give you a recipe that comes close to the original.

Ingredients:

  • 2 large flour tortillas
  • 1 cup of shredded cheese (cheddar or Monterey jack)
  • 1/2 cup of special sauce (recipe below)
  • 1/4 cup of diced onions
  • 1/4 cup of diced bell peppers
  • 1/4 cup of diced tomatoes
  • Salt and pepper, to taste

Special Sauce:

  • 1/2 cup of mayonnaise
  • 1/4 cup of sour cream
  • 1 tbsp of chili powder
  • 1 tsp of cumin
  • 1 tsp of garlic powder

  1. In a small bowl, mix together the mayonnaise, sour cream, chili powder, cumin, garlic powder, salt, and pepper to make the special sauce.
  2. Spread a tablespoon of the sauce on one side of each tortilla.
  3. Sprinkle shredded cheese, diced onions, diced bell peppers, diced tomatoes and salt and pepper on top of the sauce.
  4. Fold the tortilla in half, with the sauce and toppings inside.
  5. Heat a large skillet over medium-high heat and place the quesadilla in the skillet. Cook for 2-3 minutes on each side or until the tortilla is golden brown and the cheese is melted.
  6. Remove the quesadilla from the skillet and cut it into wedges.
  7. Serve the quesadilla with extra special sauce on top, if desired.

You stumble in the door, craving something to soak up all that alcohol. You’re in luck – you’ve got a quick and easy solution – Pasta Aglio e Olio!

This classic Italian dish is the perfect solution to your late-night hunger pangs. It’s easy to whip up, requires minimal ingredients, and takes just minutes to make. All you need is some spaghetti, garlic, olive oil, butter, red pepper flakes, parsley, and Parmesan cheese.

First, bring a pot of salted water to a boil and cook the spaghetti according to package instructions. As the pasta is cooking, heat some olive oil and butter in a large skillet and add the garlic and red pepper flakes. Cook until fragrant and lightly browned.

Buffalo Nuggets: My spin on Chicken Nuggets and Buffalo Wings, and put them together.

Once upon a time, there was a group of friends who loved nothing more than gathering for the annual Super Bowl party. This year, one of the friends, named Jack, offered to take charge of making the snacks. He suggested they make homemade chicken nuggets.

Together, they gathered all the ingredients they needed: chicken breasts, flour, eggs, panko bread crumbs, and seasonings. They divided the tasks and while one friend measure and mixed the ingredients for the coating, another friend cut the chicken breasts into bite-size pieces.

Then they dipped the chicken nuggets in the flour mixture, then the beaten eggs, and finally in the panko bread crumbs. They helped each other to make sure all the nuggets were coated evenly.

Jack helped heat the oil in the pan and put the chicken nuggets in the pan to fry. They turned golden brown and crispy. The smell was irresistible, and all of them couldn't wait to try it.

They enjoyed their homemade chicken nuggets with different dipping sauces, ketchup, ranch, and honey mustard. They all agreed that it was the best Super Bowl snack they ever had.

From that day on, they couldn't wait to gather again for the next Super Bowl party and make more homemade chicken nuggets.

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into 1 inch pieces
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 2 cups panko bread crumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cayenne pepper
  • Salt and pepper, to taste
  • 1/2 cup hot sauce (such as Frank's RedHot)
  • 1/4 cup melted butter
  • Oil for frying

Instructions:

  • In a shallow dish, mix together the flour, garlic powder, onion powder, cayenne pepper, salt, and pepper.
  • In a separate shallow dish, beat the eggs.
  • In a third shallow dish, mix together the panko bread crumbs.
  • Dip each chicken piece first in the flour mixture, then in the beaten eggs, and finally in the panko bread crumbs. Make sure each piece is well coated.
  • Heat a few inches of oil in a deep pan or pot to 350°F. (Or, Preheat the oven to 425 degrees F (220 degrees C))
  • Carefully add the chicken nuggets to the hot oil and fry for 3-4 minutes on each side, or until golden brown and cooked through.
  • Remove the nuggets from the oil with a slotted spoon and drain on a paper towel-lined plate.
  • In a separate bowl, mix together the hot sauce and melted butter.
  • Toss the chicken nuggets in the hot sauce mixture to coat.
  • Serve with blue cheese dressing or ranch dressing for dipping.

Wrapping My Meat

Wrapping My Meat: A quick tutorial for preparing meat for freezer storage with freezer paper.

Freezer paper is a heavy-duty paper that is coated on one side with a plastic film, making it ideal for wrapping meats that will be stored in the freezer. Here are the steps to properly wrap meat with freezer paper:

Start by laying out a sheet of freezer paper, plastic side up, on a clean, flat surface.

Place the meat on the paper, leaving a few inches of space around the edges.

Fold the top and bottom edges of the paper over the meat, then fold the sides in to create a snug package.

Use clear packaging tape to seal the edges of the paper, making sure that it is airtight to prevent freezer burn.

Label the package with the type of meat and the date it was packaged, and store it in the freezer.

When you are ready to use the meat, simply remove it from the freezer and unwrap it. Make sure to thaw the meat properly before cooking it.

Note: Freezer paper can be used for a variety of meats such as poultry, beef, pork, and fish, but make sure to always thaw the meat properly before cooking it.

Mirepoix Mashup

This video is a four-in-one; this is a combination of my earlier videos as part of the tutorial series, not just for you but for me as well. These were an introduction to me as I began my journey as a content creator. I will be launching season two shortly, and I am really looking forward to sharing some new recipes.

In order to sweeten and intensify the flavors of a meal, mirepoix is a culinary base created from chopped vegetables that are cooked slowly (often with some kind of fat, such as butter or oil). Since the goal is to enhance rather than caramelize the flavor of the veggies, the mixture is cooked at a relatively low temperature.

The ingredients for French mirepoix include celery, onions, and carrots. The conventional proportion is 1:2:1. (one part celery, two parts onions, and one part carrots), and add a little garlic to kick it up. Baked Jumbo Pasta Shells

Jumbo Pasta shells stuffed with ricotta cheese. In this video we are taking what we learned from the lasagna video, and spinning it for stuffed shells with ricotta cheese. Ingredients:

  • 12 large pasta shells
    15 ounces ricotta cheese
    1 cup shredded mozzarella cheese
    1/2 cup grated parmesan cheese
    1/4 cup chopped fresh parsley
    1 egg, beaten
    Salt and pepper, to taste
    1 (24-ounce) jar pasta sauce

Instructions:

  • Preheat your oven to 350°F.
  • Bring a large pot of salted water to a boil. Add the pasta shells and cook according to the package instructions. Drain the pasta and set it aside.
  • In a large bowl, mix together the ricotta cheese, mozzarella cheese, parmesan cheese, parsley, egg, salt, and pepper.
  • Stuff the cheese mixture into the cooked pasta shells and place them in a 9x13-inch baking dish.
  • Pour the pasta sauce over the top of the stuffed shells.
  • Bake the stuffed shells in the preheated oven for 20-25 minutes, or until they are hot and bubbly.
  • Remove the stuffed shells from the oven and let them cool for a few minutes before serving. Enjoy!
